I think I have this all worked out. (Pun intended.)
I had a second interview today (after convincing myself that I had horribly failed the first one) at an amazing restaurant downtown. The interview took place at 3:00, and I got a phone call at 8:30 while I was in the middle of dinner, offering me the position. Hooray! Starting this Sunday, I will be a host at The Local!
Now all I have to do is write and deliver my resignation letter to my current job (whew!-- and they are hiring a lot of people now, so I don't feel too bad), and call the senior care place where I accepted a position on Tuesday (oops!) to tell them that it's not going to work out.
I feel really good about The Local. They have some prestigious clientele, and a serious image to uphold, therefore, they have very high standards. I think they are going to value and appreciate my integrity and my work ethic. At the same time, it's a pub! I will be able to chat with people, enjoy great food, and have some fun!
I don't want to stop holding my breath yet, but I think I am beginning to get it right.
Summer's almost over, isn't it?
*Addendum: At orientation at The Local yesterday, I learned many things. Something I'm still trying to absorb is the fact that, within 30 minutes after posting the ad, my manager received roughly 150 responses. Of those, he considered about 60 seriously. He interviewed 20 people, then cut down those 20 to 9. Of those 9, he hired 4, and I am one of them. If that's not an ego-boost, I don't know what is. Consider me flattered!

Congratulations on the job, but beware of rescinding job offer acceptance. Depending upon your industry, you can get blacklisted by a number of employers doing that.
I only accepted verbally; I didn't do any paperwork or put my signature on anything. I hope that makes it okay.
